What You’ll Need to Bake These Muffins
- 1 3/4 cups of flour
- 1/2 tsp of baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ginger
- 1/3 cup of vegetable or canola oil
- 1/3 cup maple syrup
- 1 tbsp vanilla extract
- 1/2 cup of milk (any kind works, I used almond milk)
- 2 eggs
- 1 cup of shredded carrot
- 1/2 cup of walnuts, chopped
For the Crunchy Oatmeal Topping:
- 1/4 cup brown sugar
- 1 tbsp of flour
- 1 tbsp of melted butter
- 1/4 cup of walnuts, chopped
- 1/4 cup of rolled oats
