Ingredients for Carrot Cake Banana Bread
For the loaf:
- 2 ripe bananas, mashed
- 2 large eggs, room temperature
- ½ cup melted butter (or coconut oil)
- 1 tbsp vanilla extract
- ½ cup maple syrup

- 2 cups icing sugar

How to Make Carrot Cake Banana Bread
- Preheat your oven to 350°F. Grease or line a loaf pan with parchment paper.
- In a large bowl, whisk together mashed bananas, eggs, melted butter, vanilla, and maple syrup until smooth.
- In a separate bowl, combine the flour, baking soda, and salt.
