Superfood Doggy Salad

Your furry friend will be happy to see this superfood salad served for dinner. Packed with protein and antioxidants, this dish is tail wagging-ly delicious!

Serves: 4


2 sweet potatoes, cubed

1/3 cup (75 ml) olive oil, divided

1/2 cup (125 ml) blueberries, divided

2 tbsp (30 ml) cider vinegar

1 tbsp (15 ml) honey

6 cups (1.5 L) mixed greens

4 cups (1 L) shredded cooked chicken breasts

2 cups (500 ml) shredded carrots

1/4 cup (60 ml) dried cranberries

1/4 cup (60 ml) shredded coconut

Salt and pepper


  1.  Preheat oven to 400˚F (200˚C). Toss together sweet potatoes, 1 tbsp (15 ml) olive oil, and a pinch of salt and pepper. Arrange on baking sheet; roast for 20 to 25 minutes or until tender.
  1. Meanwhile, whisk together remaining olive oil, half of the blueberries, vinegar, honey, and a pinch of salt and pepper; set aside.
  1. Divide mixed greens evenly among 4 doggy bowls. Top evenly with sweet potatoes, chicken and carrots. Drizzle with blueberry mixture; top with remaining blueberries, cranberries and coconut.

Tip: To roast chicken, toss two large chicken breasts with 1 tbsp (15 ml) olive oil; roast in 400˚F (200˚C) oven for about 15 minutes or until instant-read thermometer reaches 165˚F (74˚C) when inserted into centre. Let cool before shredding.
