Hearty and healthy is what makes this dish a perfect meal! Gourmet flavours are layered into deliciously savoury bowls.

1 ½ cups (375 ml) sweet potatoes, cubed
2 tbsp (30 ml) molasses
½ lb (250 g) turkey breast, sliced into strips
2 cups (500 ml) brown rice, cooked
4 tbsp (60 ml) coconut oil, divided
2 cups (500 ml) green peas, steamed
2 cups (500 ml) chick peas
4 eggs, poached
8 tbsp (120 ml) flax seed
Salt and pepper
- Heat 1 tbsp (15 ml) coconut oil in large skillet set over medium heat; add cubed sweet potatoes and cook until tender, approximately 10 minutes. Add molasses to coat and stir continuously until caramelized. Set aside.
- Heat 1 tbsp (15 ml) coconut oil in large skillet set over medium-high heat; season turkey strips with salt and pepper and cook, turning frequently, for 3 to 5 minutes or until browned on all sides and cooked through. Set aside.
- Heat 2 tbsp (30 ml) coconut oil in large skillet set over high heat; add chick peas, stirring frequently until golden brown. Set aside.
- Place ½ cup (125 ml) of rice in each bowl. Add ¼ cup (65 ml) of caramelized sweet potato, ½ cup (125 ml) of green peas, ½ cup (125 ml) of crispy chickpeas, 2 tbsp (30 ml) of flax seed, 1 poached egg and 4 slices of cooked turkey strips.
