Total Time: 40 minutes

Serves: 4 to 6

2 large sweet potatoes, cut into 1/2-inch (1 cm) slices

2 tbsp (30 ml) olive oil, divided

2 tbsp (30 ml) molasses

1/2 lb (250 g) boneless sirloin or flank steak, cubed

1/3 cup (75 ml) beef broth

1/2 cup (125 ml) cooked barley

1 tbsp (15 ml) chopped fresh parsley

Salt and pepper

  1. Preheat oven to 400˚F (200˚C). Toss together sweet potatoes, 1 tbsp (15 ml) olive oil, and a pinch of salt and pepper. Arrange on baking sheet; roast for 20 to 25 minutes or until tender. Drizzle with molasses; set aside.
  1. Meanwhile, heat remaining olive oil in large skillet set over medium-high heat; season beef with salt and pepper and cook, turning frequently, for 3 to 5 minutes or until browned on all sides and cooked through. Add beef broth; cook for 2 to 3 minutes or until reduced by half. Add barley to skillet; cook for 1 to 2 minutes or until heated through and well coated.
  1. Divide mixture evenly over sweet potato slices. Sprinkle with fresh parsley before serving.

Tip: Ask the butcher at your local grocery or butcher shop for any beef scraps or stewing beef pieces for a more cost-effective option.
